I’m not a big fan of chili but a fan of spicing it up in the kitchen. I was introduced to a new chili seasoning product called Chuckwagon Sally Wild West Seasoning All-Purpose Chili Fixin’s through one of our loyal readers and friends. It’s not a chili seasoning kit but the perfect Wild West chili seasoning to make what they promise as “one kick-ass chili” or to complement eggs, potatoes, vegetables, meat and chicken. You’d use it just like one of your favorite spices. Here’s my own kick-ass chili recipe using the Chuckwagon Sally product. It’s best when prepared and served in your kick-ass cowboy boots.
Wendy’s Kick-ass Chili
1 lb. of ground beef sirloin
1 medium onion, diced
2 teaspoons of minced garlic
1 14 oz. can of light kidney beans
2 14.5 oz. cans of Mexican stewed tomatoes
1 16 oz. jar of salsa (I like the Zapata Fire Roasted Salsa Roja, medium to hot depending on how hot you like it)
2 tablespoons of Chuckwagon Sally Wild West Seasoning
Cook ground beef sirloin in skillet until almost browned. Add onions and garlic; mix into beef until onions are golden and beef is browned. There should be little to no grease but if a lesser quality of meat is used then drain any grease or access liquid. Add to soup pot and then add next four ingredients. Mix well and cook abut 45 minutes or simmer until ready to serve.
Serve over rice or by itself. Garnish with grated cheese, sour cream or black chips if desired.
