This simply dish was created by a Roman restaurant owner named Alfredo di Lelio. The main ingredients are butter, cream and Parmesan cheese. It’s an easy and delicious dish (how could it not be with these fabulous ingredients?!) that you could make any weekday evening; but the calorie conscious may not want to make this dish every night.

Fettuccine Alfredo

3 tablespoons unsalted butter

1 cup heavy cream

1 ½ pounds fresh fettuccine

2/3 cup freshly grated Parmesan cheese

Salt

Freshly ground black pepper

Melt butter in a small saucepan over moderate heat and add cream. Simmer until cream begins to thicken slightly, 1 to 2 minutes. Set aside.

Place fettuccine in a large pot of boiling salted water. Turn off burner and place a tea towel over the top of pot and pasta should be ready in about 20 minutes. Drain the pasta and return it to the pot. Over low heat toss the sauce with the pasta and add the Parmesan until all the ingredients are mixed well. Season with salt and pepper to taste. Serve immediately on heated plates. Sprinkle with additional Parmesan cheese if desired.   

Serve with green salad, crusty bread with butter and a great bottle of wine.
