Chef Linton Hopkins of Restaurant Eugene and Holeman & Finch (pictured below and to right) brings his cooking know-how to Simple Abundance to teach you all about chicken—the many ways it can be prepared, the variations of chicken available in the markets and how to select the one you want. He will also teach participants how to prepare three chicken dishes: The Perfect Roast Chicken—the method to
roasting, how to make a pan jus from the drippings and how to use the leftover bones to make a rich stock; Chicken and Dumplings—how easy this one pot dish is to make and why it is one of the great dishes of the southern repertoire; and Fried Chicken—the secrets to moist, crisp fried chicken every time. The evening includes wine tastings sponsored by Sherlock’s Wine Merchant and a chance to win fabulous door prizes provided by Atlanta Beverage, Bella Cucina Artful Foods, and Cabot Cheese.
