You have to love those New Yorkers, especially when they’re making fabulous fresh pasta that gets distributed to supermarkets, gourmet food stores and restaurants along the East Coast and in the Southwest. I’ve been looking for another excellent fresh pasta source in our area to use for my Italian dishes, after our city’s Via Elisa closed last year; and I’ve found it. It’s Penne Lane Pasta Company and they produce a full line of fresh pastas including spaghetti, linguine, fettuccine and more, to specialty fresh pastas like manicotti, stuffed shells, ravioli, tortellini, gnocchi, rigatoni, agnolotti, cavatelli, and ravioletti. Their products are all natural and they use no preservatives. I was especially impressed with their packaging which wasn’t fancy but served its purpose perfectly. The pumpkin ravioli that I purchased from Whole Foods was in what I would call institutional-style packaging but they spend their money where it counts—inside—where the raviolis were in trays with their own individual compartment.
Penne Lane Pasta Company also makes a variety of sauces which should appeal to just about anyone’s particular taste, whether it’s a classic marinara sauce to a pink vodka sauce to a variety of clam sauces. Their sauces are prepared with no additives or preservatives, using certified-organic tomatoes and even the wine used in their sauces are organic and free from added sulfites.

So if you’re looking to prepare a gourmet dinner serving fresh pastas and sauces without having to personally go to all the trouble, because they’ve gone to all the trouble, then Penne Lane Pasta Company’s fresh pastas and sauces may be your answer.
I prepared the pumpkin ravioli to their directions, but let the water come to boil and continued to boil at a low simmer, not to damage the ravioli, and then served it with my own sage and brown butter sauce topped with pine nuts.
